Ingredients

  • 1.5 lbs Baby Potatoes
  • 2 cups Mixed Vegetables (bell peppers, zucchini, carrots)
  • 3 tbsp Olive Oil
  • 4 cloves Garlic (minced)
  • 2 tsp Mixed Herbs (rosemary, thyme, parsley)
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. Chop the mixed vegetables into bite-sized pieces.
  4. Combine baby potatoes and mixed vegetables in a large bowl.
  5. Drizzle with olive oil, add minced garlic, chopped herbs, salt, and pepper. Toss well.
  6. Spread the mixture in a single layer on a baking sheet.
  7. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  8. Serve warm, garnished with additional herbs if desired.
