- 1.5 lbs Baby Potatoes
- 2 cups Mixed Vegetables (bell peppers, zucchini, carrots)
- 3 tbsp Olive Oil
- 4 cloves Garlic (minced)
- 2 tsp Mixed Herbs (rosemary, thyme, parsley)
- Salt and Pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- Chop the mixed vegetables into bite-sized pieces.
- Combine baby potatoes and mixed vegetables in a large bowl.
- Drizzle with olive oil, add minced garlic, chopped herbs, salt, and pepper. Toss well.
- Spread the mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- Serve warm, garnished with additional herbs if desired.
