German Cabbage and Dumplings

Description

A comforting dish of soft dumplings cradling seasoned cabbage, perfect for family dinners and holidays.


Ingredients

  • 1 small head of green cabbage, chopped
  • 4 cups of water
  • 2 cups of all-purpose flour
  • 2 large eggs
  • 1/2 cup of milk
  • 1/2 teaspoon of salt
  • 2 tablespoons of butter
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Bring 4 cups of water to a boil in a large pot. Add the chopped cabbage and allow it to cook for about 5 minutes until tender. Drain and set aside.
  2. Combine 2 cups of all-purpose flour, 2 large eggs, 1/2 cup of milk, and 1/2 teaspoon of salt in a large mixing bowl. Mix vigorously until a smooth dough forms.
  3. Melt 2 tablespoons of butter in a separate pan over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes.
  4. Drop spoonfuls of dumpling dough into the boiling water. Cook for 5-7 minutes, or until they float to the surface.
  5. Combine the floating dumplings with the sautéed cabbage and onions. Season with salt and pepper to taste and serve warm.

Notes

You can prepare the dough a few hours in advance and store it in the fridge. For a crispy texture, consider roasting or air frying the dumplings after boiling.
