- 2 cups gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the grated carrots and crushed pineapple.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the chopped walnuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the cream cheese glaze by beating the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Once the bars are cool, spread the cream cheese glaze on top.
- Cut into bars and serve.
Notes
- Store leftovers in an airtight container in the refrigerator.
- For a dairy-free version, substitute cream cheese with a dairy-free alternative.
- These bars can be frozen for up to 3 months.
