- 2 cups mashed sweet potatoes
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the mashed sweet potatoes, almond flour, coconut flour, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
- Add the baking powder, cinnamon, and salt, and mix until well combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the bars cool completely before frosting.
- For the frosting, mix together 1/2 cup of softened cream cheese, 1/4 cup of honey, and 1 tsp of vanilla extract until smooth.
- Spread the frosting over the cooled sweet potato bars and cut into squares.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These bars can be frozen for up to 3 months.
- Feel free to add nuts or chocolate chips for extra flavor.
