Description

Delicious gluten-free sweet potato bars topped with creamy vanilla frosting, perfect for a healthy dessert or snack.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, almond flour, coconut flour, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
  3. Add the baking powder, cinnamon, and salt, and mix until well combined.
  4. Pour the batter into the prepared baking dish and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the bars cool completely before frosting.
  7. For the frosting, mix together 1/2 cup of softened cream cheese, 1/4 cup of honey, and 1 tsp of vanilla extract until smooth.
  8. Spread the frosting over the cooled sweet potato bars and cut into squares.

  • These bars can be frozen for up to 3 months.
