Instructions

  1. Marinate the Chicken: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Place the chicken breasts into the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or up to overnight).
  2. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for about 6-7 minutes on each side or until fully cooked. The internal temperature should reach 165°F (75°C). Once cooked, remove and let rest for a few minutes before slicing.
  3. Prepare the Tzatziki: In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix thoroughly and adjust seasoning to taste. Set aside for flavors to blend.
  4. Cook the Base: Prepare rice or quinoa according to package instructions. This will be the hearty foundation for your bowls.
  5. Assemble the Bowls: Start by layering the base of your choice—rice or quinoa—and then arrange the sliced chicken on top. Add a generous scoop of diced cucumbers, chopped tomatoes, diced red onion, and crumbled feta. Drizzle with the tzatziki sauce and finish with a sprinkle of fresh parsley and a squeeze of lemon juice.

Notes

Let the chicken marinate for at least one hour for better flavor. Consider using an air fryer for a crispy exterior.
