Ingredients

- 2 lbs Yukon Gold or Russet Potatoes
- 1 cup Feta Cheese, crumbled
- 1/4 cup Extra Virgin Olive Oil
- 3 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
- 1 tablespoon Oregano, dried or fresh
- Juice from 1 Lemon
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the potatoes into wedges.
- In a bowl, toss the potato wedges with olive oil, minced garlic, salt, pepper, and oregano.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes until golden and crispy, turning them halfway through.
- Remove from the oven and crumble feta cheese over the hot potatoes.
- Drizzle with lemon juice before serving.
Notes
For a quick version, use an air fryer for wonderfully crispy potatoes in about 20 minutes. Store leftovers in the fridge for up to 3 days or freeze for up to three months.
