Description

Golden, crispy wedges of potato infused with feta, garlic, and oregano, creating a flavorful side dish that’s a celebration of Mediterranean cuisine.


Ingredients

  • 2 lbs Yukon Gold or Russet Potatoes
  • 1 cup Feta Cheese, crumbled
  • 1/4 cup Extra Virgin Olive Oil
  • 3 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon Oregano, dried or fresh
  • Juice from 1 Lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the potatoes into wedges.
  3. In a bowl, toss the potato wedges with olive oil, minced garlic, salt, pepper, and oregano.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast for 30-35 minutes until golden and crispy, turning them halfway through.
  6. Remove from the oven and crumble feta cheese over the hot potatoes.
  7. Drizzle with lemon juice before serving.

Notes

For a quick version, use an air fryer for wonderfully crispy potatoes in about 20 minutes. Store leftovers in the fridge for up to 3 days or freeze for up to three months.
