Description

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup chopped fresh veggies (cucumber, bell peppers, and tomatoes)
  • 1 cup Tzatziki sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ingredients in a large bowl: combine ground meat, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into golf-ball-sized meatballs and arrange them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for about 20-25 minutes, or until cooked through and slightly browned.
  5. Prepare the rice according to package instructions.
  6. Assemble the bowl by layering the cooked rice, meatballs, veggies, and drizzling Tzatziki sauce on top.

Notes

Prepare the meatballs in advance and refrigerate before baking. They can be frozen for up to 3 months.
