- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 tablespoons fresh parsley (chopped)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, thyme, salt, and pepper. Mix until well combined.
- Form the mixture into golf ball-sized meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes, or until cooked through and golden brown.
- In a saucepan, bring the chicken broth to a boil, stir in the rice and lemon zest, cover, and simmer until rice is tender.
- Fluff the rice and stir in the lemon juice, olive oil, and chopped parsley.
- Serve the meatballs on a bed of lemon herb rice, garnished with additional parsley if desired.
Notes
You can prepare the meatballs a day in advance and refrigerate. For air-frying, cook at 375°F (190°C) for about 15 minutes.
