Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, thyme, salt, and pepper. Mix until well combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes, or until cooked through and golden brown.
  5. In a saucepan, bring the chicken broth to a boil, stir in the rice and lemon zest, cover, and simmer until rice is tender.
  6. Fluff the rice and stir in the lemon juice, olive oil, and chopped parsley.
  7. Serve the meatballs on a bed of lemon herb rice, garnished with additional parsley if desired.

Notes

You can prepare the meatballs a day in advance and refrigerate. For air-frying, cook at 375°F (190°C) for about 15 minutes.
