Ingredients

  • 2 medium boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice (or quinoa)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Pinch of paprika (optional)
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 12 tbsp water (to thin)

Instructions

  1. Grill the chicken by preheating your grill or grill pan over medium-high heat. Season generously with salt, pepper, and paprika. Grill for 6–7 minutes per side until the internal temperature reaches 165°F (74°C). Let rest before slicing.
  2. Steam the broccoli in a pot with boiling water, using a steamer basket for 4–5 minutes until bright green and just tender.
  3. Make the sauce by whisking together Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper. Thin with water as needed.
  4. Assemble the bowls by dividing cooked brown rice or quinoa, topping with grilled chicken, broccoli, and creamy garlic sauce. Finish with a pinch of salt or paprika.
