Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 medium cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 cup Greek yogurt
  • 2 tbsp fresh dill, chopped

Instructions

  1. Marinate the chicken in olive oil, lemon juice, minced garlic, and chopped dill for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F.
  3. Let the chicken rest for a few minutes before slicing it into strips.
  4. In a medium bowl, mix the Greek yogurt, minced garlic, lemon juice, and chopped dill to create the tzatziki sauce.
  5. Assemble the bowl by layering fresh spinach, sliced cucumber, halved cherry tomatoes, and grilled chicken.
  6. Drizzle the tzatziki sauce over the top and serve immediately.
