- 1 lb boneless, skinless chicken breast
- 1 medium cucumber, sliced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 cup Greek yogurt
- 2 tbsp fresh dill, chopped
Instructions
- Marinate the chicken in olive oil, lemon juice, minced garlic, and chopped dill for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before slicing it into strips.
- In a medium bowl, mix the Greek yogurt, minced garlic, lemon juice, and chopped dill to create the tzatziki sauce.
- Assemble the bowl by layering fresh spinach, sliced cucumber, halved cherry tomatoes, and grilled chicken.
- Drizzle the tzatziki sauce over the top and serve immediately.
