- 2 cups beef broth

- 1 tablespoon mustard seeds

- 1 onion, quartered
- 1 head of cabbage, cut into wedges
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Prepare the brisket: Place the corned beef brisket into the slow cooker.
- Mix the marinade: Combine Guinness, beef broth, brown sugar, mustard seeds, and garlic in a bowl.
- Add the onions: Scatter quartered onion on top of the brisket.
- Slow cook: Cover and set the cooker on low for 8-10 hours.
- Roast the cabbage: Preheat oven to 425°F. Arrange cabbage wedges on a baking sheet, drizzle with olive oil, and season.
- Caramelize the cabbage: Roast for 20-25 minutes until edges are crispy.
- Slice and serve: Remove brisket and slice against the grain, plating with roasted cabbage.
