Ingredients

  • 4 chicken thighs or breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1 tablespoon ginger, grated
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • Green onions for garnish

Instructions

  1. Whisk together the pineapple juice, soy sauce, grated ginger, brown sugar, minced garlic, and black pepper in a medium mixing bowl until well combined.
  2. Place the chicken in a resealable bag, pour the marinade over it, seal the bag, and remove excess air, ensuring the chicken is well coated. Refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, discarding the leftover marinade.
  5. Grill the chicken for approximately 5-7 minutes on each side until thoroughly cooked and internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for a few minutes before slicing.
  7. Garnish with chopped green onions and serve immediately.
