- 4 chicken thighs or breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1 tablespoon ginger, grated
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- Green onions for garnish
Instructions
- Whisk together the pineapple juice, soy sauce, grated ginger, brown sugar, minced garlic, and black pepper in a medium mixing bowl until well combined.
- Place the chicken in a resealable bag, pour the marinade over it, seal the bag, and remove excess air, ensuring the chicken is well coated. Refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, discarding the leftover marinade.
- Grill the chicken for approximately 5-7 minutes on each side until thoroughly cooked and internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before slicing.
- Garnish with chopped green onions and serve immediately.
Notes
For maximum flavor, marinate the chicken overnight. Adjust cooking times for different cuts of chicken.
