Ingredients

- 4 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup red bell pepper, diced
- 1/2 cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- Optional: chopped cilantro for garnish
Instructions
- Combine your vegetables: In a large mixing bowl, toss together the shredded cabbage, carrots, pineapple chunks, and diced red bell pepper until evenly distributed.
- Craft the dressing: In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
- Assemble the coleslaw: Pour the dressing over the cabbage mixture and toss gently to coat.
- Chill & marinate: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Garnish & serve: Sprinkle chopped cilantro over the top before serving.
Notes
This coleslaw can be made a day in advance for deeper flavors. Add diced jalapeños for heat or macadamia nuts for crunch.
