Ingredients

  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup red bell pepper, diced
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: chopped cilantro for garnish

Instructions

  1. Combine your vegetables: In a large mixing bowl, toss together the shredded cabbage, carrots, pineapple chunks, and diced red bell pepper until evenly distributed.
