Ingredients
- Ravioli (cheese, spinach, or meat)
- Tomato sauce (store-bought or homemade)
- Bell peppers, zucchini, or spinach (fresh vegetables)
- Mozzarella cheese
- Parmesan cheese (optional)
- Ground meat (beef, turkey, or sausage, optional)
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the Ravioli: In a large pot, bring salted water to a boil. Cook the ravioli according to package directions until al dente. Drain and set aside.
- Sauté the Veggies: In a large skillet over medium heat, add olive oil. Sauté chopped vegetables until tender, about 5-7 minutes. If using, add ground meat and cook until browned; season with salt and pepper.
- Create the Sauce: Stir in the tomato sauce and let it simmer for another 5 minutes. Optional: mix in fresh herbs.
- Assemble the Casserole: In a greased baking dish, spread a thin layer of sauce, then layer half of the cooked ravioli followed by half of the sautéed veggie mixture. Sprinkle with mozzarella cheese. Repeat the layers, ending with cheese on top.
- Bake: Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Serve: Let the casserole cool for a few minutes before slicing and serving.

Make-ahead option: Assemble in advance, cover with foil, refrigerate. Increase baking time if cooking from fridge. Customize with spices or breadcrumbs for texture.
