- 2 Chicken Breasts, diced
- 1/4 cup Hot Honey
- 1/2 cup BBQ Sauce
- 1 cup Cheese (Monterey Jack or Cheddar)
- 4 Tortillas (flour or whole wheat)
- 1/2 Onion, sliced
- 1 Bell Pepper, sliced
- Olive oil for cooking
Instructions
- Cook the chicken: In a heated skillet, add a drizzle of olive oil. Toss in the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
- Mix sauces: Lower the heat and pour in your BBQ sauce and hot honey. Stir well to coat the chicken, letting the flavors meld for an additional 2 minutes.
- Prepare the quesadilla: Lay a tortilla flat in the skillet. Sprinkle cheese on one half, followed by the chicken mixture, sliced onions, and more cheese.
- Folding and cooking: Fold the tortilla over and cook for about 2-3 minutes until golden brown and crispy. Use a spatula to press down lightly.
- Flip and finish: Carefully flip the quesadilla and cook the other side until crispy, about 2-3 minutes more.
- Serve warm: Cut into wedges and enjoy with additional hot honey or your favorite dipping sauce.
Notes
Prepare the chicken filling a day in advance for convenience. For a healthier option, try air frying the quesadillas.
