- 4 chicken thighs
- 1/2 cup soy sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 2 green onions, chopped (for garnish)
Instructions
- Create the marinade: In a mixing bowl, whisk together the soy sauce, pineapple juice, brown sugar, ketchup, minced garlic, ginger, black pepper, and red pepper flakes until fully combined.
- Marinate the chicken: Place the chicken thighs in a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is generously coated. Seal the bag and refrigerate for at least 2 hours, ideally overnight.
- Prepare the grill: Preheat your grill to medium-high heat (around 375°F-400°F).
- Grill the chicken: Remove the chicken from the marinade and discard what’s left in the bag. Lightly oil the grill grates and grill the chicken for about 6-7 minutes on each side, checking for an internal temperature of 165°F (75°C).
- Serve it up: Once cooked, take the chicken off the grill, allow it to rest for a few minutes, garnish with chopped green onions, and serve immediately.
Notes
Marinate the chicken overnight for optimal flavor. If grilling isn’t an option, you can also make Huli Huli Chicken in an air fryer or bake it.
