  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • Pineapple slices (for grilling)
  • Green onions (for garnish)

Instructions

  1. Make the Marinade: In a large bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil until well combined.
  2. Marinate the Chicken: Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over. Ensure the chicken is well coated, then refrigerate for at least two hours, or ideally, overnight.
  3. Preheat the Grill: Fire up your grill to medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill the thighs for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Grill the Pineapple: (Optional) Grill the pineapple slices for a couple of minutes on each side until caramelized.
