Description

Ingredients

  • 3 large eggs
  • ¾ cup vegetable oil
  • 1 cup chopped walnuts or pecans
  • ¾ cup golden raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by lining it with parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and spices.
  3. Combine wet ingredients: In a separate bowl, blend the granulated sugar, brown sugar, and eggs until creamy. Gradually whisk in the oil.
  4. Combine mixtures: Gently fold the dry ingredients into the wet mixture. Stir until just combined.
  5. Add in the star players: Gently fold in your grated carrots, chopped walnuts, and golden raisins.
  6. Bake: Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Notes
