- 1 teaspoon baking powder

- 3 large eggs
- ¾ cup vegetable oil
- 1 cup chopped walnuts or pecans
- ¾ cup golden raisins
Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking pan by lining it with parchment paper.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and spices.
- Combine wet ingredients: In a separate bowl, blend the granulated sugar, brown sugar, and eggs until creamy. Gradually whisk in the oil.
- Combine mixtures: Gently fold the dry ingredients into the wet mixture. Stir until just combined.
- Add in the star players: Gently fold in your grated carrots, chopped walnuts, and golden raisins.
- Bake: Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool and frost: Let cool completely in the pan, then spread cream cheese frosting over the cooled bars.

Notes
For a vegan version, replace eggs with flaxseed meal and use coconut oil instead of vegetable oil.
