A delightful side dish featuring tender, buttery sweet potatoes with a hint of rosemary and thyme, complemented by a drizzle of maple syrup.

- 4 medium Sweet potatoes (approx. 2 pounds)
- 4 tablespoons Unsalted butter
- 2 tablespoons Olive or avocado oil
- 1 teaspoon Fresh rosemary
- 1 teaspoon Fresh thyme
- 3 cloves Garlic (finely minced)
- 1 teaspoon Sea salt
- 1/4 teaspoon Black pepper
- 1 cup Chicken broth
- 1/2 teaspoon Ground cinnamon (optional)
- 1/4 cup Raw pecans (optional)
- 3 tablespoons Maple syrup (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the sweet potatoes by peeling and cutting them into even-sized chunks, about 2 inches each.
- Blend the unsalted butter, olive oil, minced garlic, sea salt, black pepper, rosemary, thyme, and ground cinnamon (if using) in a small bowl.
- Combine the sweet potatoes in a baking dish and pour the flavor base over them, tossing to coat evenly.
- Add the chicken broth to the baking dish, allowing it to surround the potatoes.
- Bake covered with foil for 30 minutes, then remove the foil.
- Crisp the potatoes by drizzling with maple syrup and baking for an additional 20-25 minutes or until golden and fork-tender.
- Top with chopped pecans before serving.
Notes
You can prepare the sweet potatoes up to 24 hours in advance. They can also be air-fried at 380°F (193°C) for 20-25 minutes.
