Description

A delightful side dish featuring tender, buttery sweet potatoes with a hint of rosemary and thyme, complemented by a drizzle of maple syrup.


Ingredients

  • 4 medium Sweet potatoes (approx. 2 pounds)
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive or avocado oil
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Fresh thyme
  • 3 cloves Garlic (finely minced)
  • 1 teaspoon Sea salt
  • 1/4 teaspoon Black pepper
  • 1 cup Chicken broth
  • 1/2 teaspoon Ground cinnamon (optional)
  • 1/4 cup Raw pecans (optional)
  • 3 tablespoons Maple syrup (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cutting them into even-sized chunks, about 2 inches each.
  3. Blend the unsalted butter, olive oil, minced garlic, sea salt, black pepper, rosemary, thyme, and ground cinnamon (if using) in a small bowl.
  4. Combine the sweet potatoes in a baking dish and pour the flavor base over them, tossing to coat evenly.
  5. Add the chicken broth to the baking dish, allowing it to surround the potatoes.
  6. Bake covered with foil for 30 minutes, then remove the foil.
  7. Crisp the potatoes by drizzling with maple syrup and baking for an additional 20-25 minutes or until golden and fork-tender.
  8. Top with chopped pecans before serving.

Notes

You can prepare the sweet potatoes up to 24 hours in advance. They can also be air-fried at 380°F (193°C) for 20-25 minutes.
