- 1/2 cup Vegetable Oil
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 1 cup Boiling Water
- 2 cups Fresh Strawberries
- 1 tablespoon Lemon Juice
- 8 ounces Dark Chocolate
- 2 tablespoons Coconut Oil
Instructions
- Preheat the oven to 350°F (175°C) and prepare your baking pans.
- Mix dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine wet ingredients: buttermilk, oil, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry, mixing gently until combined.
- Add boiling water carefully, creating a thin batter.
- Divide the batter between prepared pans and bake for 30-35 minutes.
- Cool the cakes in the pans for 10 minutes, then flip onto cooling racks.
- Prepare the frosting by melting dark chocolate and coconut oil.
- Create layers with fresh strawberries and frosting between the cake layers.
- Finish by pouring melted chocolate over the cake for a chocolate shell.
Notes
Refrigerate leftover cake for up to a week, or freeze for up to three months.
