  • 2 pounds beef chuck (cut into 1-inch pieces)
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1 can (14.9 oz) Guinness stout
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 pounds potatoes (diced)
  • 1 cup peas (optional)
  • Fresh parsley for garnish

Instructions

  1. Brown the beef: In a large pot, heat the olive oil over medium heat. Add the beef in batches, browning on all sides. Remove the beef and set it aside on a plate.
  2. Sauté the vegetables: In the same pot, toss in the onion, carrots, and garlic. Sauté for about five minutes until the onions are translucent and vegetables soften.
  3. Add the Guinness: Pour in the Guinness and scrape up any caramelized bits from the bottom of the pot.
  4. Combine the ingredients: Stir in the reserved beef, beef broth, tomato paste, thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer.
  5. Slow-cook to perfection: Cover and reduce the heat, letting the stew cook on low for approximately 120 minutes or until the beef is tender.
  6. Add the potatoes: Gently fold in the diced potatoes. Continue cooking until the potatoes are tender, about 30 minutes.
  7. Finish and serve: Remove the bay leaves, adjust seasoning to taste, and ladle into warm bowls. Garnish with fresh parsley.

Notes

This stew tastes better the next day as the flavors meld together. It’s also adaptable; feel free to use different vegetables.
