Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare the Pan: Grease two 9-inch round cake pans and dust with flour.
  3. Mix the Dry Ingredients: Whisk together flour, baking soda, and salt in a bowl.
  4. Cream the Sugar and Butter: Beat butter and sugar until fluffy, about 3-4 minutes.
  5. Add the Eggs: Incorporate eggs one at a time, mixing well after each addition.
  6. Combine Wet and Dry: Gradually mix in the flour mixture with the butter mixture, alternating with the crushed pineapple.
  7. Pour and Bake: Divide batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  8. Cool the Cakes: Allow cakes to cool in pans for 10 minutes before transferring to wire racks.
  9. Prepare the Frosting: Beat cream cheese and butter, then add confectioners’ sugar and vanilla until smooth.
  10. Assemble: Spread frosting between the layers and on top of the cooled cakes. Garnish with coconut flakes and chopped nuts.

Notes

For a fresher flavor, you can substitute crushed pineapple with diced fresh pineapple. Wrap cakes tightly in plastic wrap for storage.
