- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 egg
- 1 cup marinara sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, onion, minced garlic, egg, salt, and pepper in a large mixing bowl.
- Shape the mixture into a loaf.
- Transfer the loaf to a baking dish and create a shallow well down the center, filling it with shredded mozzarella cheese.
- Cover the meatloaf with marinara sauce.
- Sprinkle additional breadcrumbs over the sauce.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (73°C).
- Allow it to rest for 5-10 minutes before slicing.
Notes
Make ahead by preparing the meat mixture the night before. Experiment with different cheeses for variation.
