Description

A flavorful Italian twist on classic meatloaf made with ground chicken, filled with gooey mozzarella and topped with marinara sauce.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, onion, minced garlic, egg, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into a loaf.
  4. Transfer the loaf to a baking dish and create a shallow well down the center, filling it with shredded mozzarella cheese.
  5. Cover the meatloaf with marinara sauce.
  6. Sprinkle additional breadcrumbs over the sauce.
  7. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (73°C).
  8. Allow it to rest for 5-10 minutes before slicing.

Notes

Make ahead by preparing the meat mixture the night before. Experiment with different cheeses for variation.
