Description

A playful take on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups are packed with corned beef, sauerkraut, and melted cheese, all wrapped in a crispy exterior.


Ingredients

  • 2 cups shredded cheese (Swiss or cheddar)
  • 8 oz corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, mix the sauerkraut with Dijon mustard, salt, and pepper.
  4. Melt the shredded cheese in a saucepan over medium heat until it forms a flat layer.
  5. Carefully place slices of corned beef and a generous spoonful of the sauerkraut mixture onto the cheese layer.
  6. Roll the cheese around the filling to create a roll-up.
  7. Place the roll-ups seam side down on the baking sheet.
  8. Drizzle with olive oil and bake for 10-12 minutes until golden and crispy.
  9. Let cool slightly before serving.

Notes

You can make the sauerkraut filling a day in advance for quicker assembly. Substitute corned beef with vegetables for a vegetarian version.
