A playful take on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups are packed with corned beef, sauerkraut, and melted cheese, all wrapped in a crispy exterior.

- 2 cups shredded cheese (Swiss or cheddar)
- 8 oz corned beef, sliced
- 1 cup sauerkraut, drained
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a bowl, mix the sauerkraut with Dijon mustard, salt, and pepper.
- Melt the shredded cheese in a saucepan over medium heat until it forms a flat layer.
- Carefully place slices of corned beef and a generous spoonful of the sauerkraut mixture onto the cheese layer.
- Roll the cheese around the filling to create a roll-up.
- Place the roll-ups seam side down on the baking sheet.
- Drizzle with olive oil and bake for 10-12 minutes until golden and crispy.
- Let cool slightly before serving.
Notes
You can make the sauerkraut filling a day in advance for quicker assembly. Substitute corned beef with vegetables for a vegetarian version.
