A refreshing Key Lime Poke Cake that captures the essence of summer with its zesty lime filling and creamy topping.

- 1 box yellow cake mix (15.25 oz)
- 1 cup water
- ½ cup vegetable oil
- 3 large eggs
- 1 package lime-flavored gelatin mix (3 oz)
- 1 cup key lime juice (bottled or fresh)
- ¾ cup white sugar
- 1 tablespoon cornstarch
- 2 tablespoons butter
- 1 tablespoon lime zest
- Green food coloring (optional)
- 1 container whipped topping (8 oz, thawed)
- Extra lime zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix the cake mix, water, oil, and eggs in a large bowl. Beat for about 2 minutes until smooth.
- Pour the batter into the prepared dish and bake for 25 to 30 minutes, or until a toothpick comes out clean. Cool for 10 minutes.
- Poke holes all over the warm cake with a wooden spoon handle.
- Whisk together the lime gelatin mix, key lime juice, sugar, and cornstarch in a saucepan over medium heat for 3 to 5 minutes until thickened.
- Stir in butter and lime zest until smooth. (Add food coloring if desired.)
- Pour the lime filling over the poked cake, and let it cool to room temperature. Chill in the refrigerator for at least 2 hours.
- Spread the whipped topping evenly over the cake, and garnish with additional lime zest.
Notes
This cake can be made a day in advance for deeper flavor. Avoid pouring filling over a hot cake, and ensure deep enough holes for the filling to seep in.
