Description

A delightful cheesecake featuring a creamy filling with vibrant raspberry and lemon swirls, all resting on a crunchy graham cracker crust.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1/2 cup lemon curd
  • 1 tbsp lemon juice
  • 1/2 cup raspberry puree
  • 1 tbsp sugar
  • Yellow and red food coloring (optional)
  • Lemon zest curls for garnish
  • Fresh raspberries for garnish
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until the mixture resembles wet sand.
  3. Press the mixture into the bottom of the prepared pan to form a sturdy crust.
  4. Beat the softened cream cheese and sugar together until smooth and creamy.
  5. Add the vanilla extract and eggs one at a time, mixing well after each.
  6. Mix in the sour cream, lemon zest, and lemon juice until well combined.
  7. Pour half of the cheesecake filling over the crust and smooth the top.
  8. Combine lemon curd and lemon juice in one bowl, and raspberry puree with sugar in another.
  9. Drop spoonfuls of both mixtures onto the cheesecake layer and gently swirl using a knife.
  10. Top with the remaining cheesecake filling and smooth the surface.
  11. Bake for 50-60 minutes, until the edges are set and the center jiggles slightly.
  12. Cool in the oven with the door slightly ajar for one hour, then refrigerate for at least 4 hours or overnight.
  13. Remove cheesecake from the pan, garnish with lemon zest, fresh raspberries, and whipped cream before serving.

Notes

Make in advance for better flavor. Allow cooling gradually to avoid cracks. Use room temperature ingredients for a smooth filling.
