Description
A vibrant and flavorful grilled chicken dish marinated in zesty lime juice, perfect for summer gatherings.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup creamy dressing (such as ranch or cilantro-lime)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
Instructions
- Mix the Marinade: In a large bowl, whisk together the lime juice, olive oil, garlic powder, onion powder, cumin, chili powder, salt, and pepper until well combined.
- Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they’re fully coated. Let them sit for at least 30 minutes, or refrigerate for up to 4 hours.
- Preheat the Grill: Set your grill to medium-high heat.
- Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill for 6-7 minutes per side until the internal temperature hits 165°F.
- Add Creaminess: In the last few minutes of grilling, brush the creamy dressing over the chicken and sprinkle generously with shredded cheese.
- Melt the Cheese: Close the grill lid to help the cheese melt beautifully.
- Serve with Freshness: Once cooked, remove from the grill, garnish with fresh cilantro, and serve.
Notes
Marinating overnight enhances flavor. Can also be baked or air-fried if grilling isn’t an option.
