- 4 Cod or Tilapia fillets
- 1 Lemon, juiced and zested
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Black Olives (Kalamata preferred)
- 4 cloves Garlic, minced
- 1 tsp Oregano (fresh or dried)
- 3 tbsp Olive Oil
- 1/4 cup Fresh Parsley, chopped (for garnish)
- Crusty Bread (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cod or tilapia fillets in a baking dish.
- Squeeze fresh lemon juice over the fish.
- Scatter cherry tomatoes, black olives, minced garlic, and oregano over the fish.
- Drizzle olive oil evenly over the ingredients.
- Bake in the preheated oven for 20-25 minutes.
- Garnish with fresh parsley before serving.
- Serve with a side of crusty bread.
