Ingredients

  • 4 Cod or Tilapia fillets
  • 1 Lemon, juiced and zested
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Black Olives (Kalamata preferred)
  • 4 cloves Garlic, minced
  • 1 tsp Oregano (fresh or dried)
  • 3 tbsp Olive Oil
  • 1/4 cup Fresh Parsley, chopped (for garnish)
  • Crusty Bread (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cod or tilapia fillets in a baking dish.
  3. Squeeze fresh lemon juice over the fish.
  4. Scatter cherry tomatoes, black olives, minced garlic, and oregano over the fish.
  5. Drizzle olive oil evenly over the ingredients.
  6. Bake in the preheated oven for 20-25 minutes.
  7. Garnish with fresh parsley before serving.
  8. Serve with a side of crusty bread.
