Description

Ingredients

  • 2 cod or tilapia fillets
  • 1 lemon, sliced
  • 1 cup cherry tomatoes
  • ½ cup black olives (Kalamata recommended)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 3 tbsp olive oil
  • ¼ cup fresh parsley, chopped
  • Crusty bread, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking dish by lightly coating it with olive oil.
  3. Arrange the cod or tilapia fillets in the center of the baking dish.
  4. Layer the sliced lemons on top of the fish.
  5. Add the cherry tomatoes and black olives around the fish.
  6. Sprinkle the minced garlic and oregano over the dish.
  7. Drizzle olive oil generously over everything.
  8. Bake for 20-25 minutes until the fish is opaque and flaky.
  9. Garnish with fresh parsley and serve with crusty bread.
