  • 1 tbsp fresh oregano (or 1 tsp dried oregano)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Crusty bread (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Layer the fish fillets in a baking dish, ensuring they fit snugly.
  3. Top the fish with lemon slices, cherry tomatoes, and black olives.
  4. Sprinkle with minced garlic and oregano.
  5. Drizzle olive oil evenly over the top.
  6. Bake for 20-25 minutes until the fish flakes easily with a fork.
  7. Garnish with fresh parsley before serving.
  8. Serve with crusty bread to soak up the juices.

Notes
