Ingredients

- 2 cups cooked pasta (penne or rotini)
- 1 cup grilled chicken, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper until emulsified.
- Pour the dressing over the pasta salad and toss gently to combine.
- Refrigerate for at least 30 minutes to allow flavors to meld.
Notes
This salad can be made ahead of time for enhanced flavors. It can also be customized with other vegetables or proteins.
