- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a large mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper. Mix well until all ingredients are evenly incorporated.
- Lay one tortilla flat on a clean surface. Spoon one-fourth of the cheese and vegetable mixture onto one half of the tortilla. Carefully fold the other half over to cover the filling completely.
- Heat a non-stick skillet over medium heat and add olive oil. Once the oil shimmers, gently place the filled tortilla in the skillet. Cook for about 3-4 minutes, or until the bottom turns golden brown and crispy.
- Flip the quesadilla using your spatula and cook for an additional 3-4 minutes until the other side is equally crispy.
- Remove the quesadilla from the heat. Use a sharp knife to cut it into wedges, and serve warm for everyone to enjoy.
Notes
Make-Ahead Tips: Prepare the filling a day in advance and store it in an airtight container in the refrigerator. For a different texture, swap out the flour tortillas for whole wheat or corn tortillas.
