Description

Ingredients

  • 2 tbsp sugar
  • 1 can sweetened condensed milk
  • ½ cup key lime juice
  • 1 tsp lime zest
  • 1 cup whipped cream
  • For topping: Additional whipped cream and lime slices

Instructions

  1. Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this crumb mixture firmly into the bottom and sides of the mini tart pans. Bake in a preheated oven at 350°F for about 8-10 minutes, or until lightly golden. Let them cool completely before filling.
  2. Make the filling: In another bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until well mixed. Fold in the whipped cream gently, allowing the mixture to stay airy and light.
  3. Fill the crusts: Spoon the filling into each cooled crust evenly, making sure not to overfill. Smooth the tops for a polished look.
  4. Chill: Cover the mini pies with plastic wrap and refrigerate for at least three hours, preferably overnight.
