  • 150g sugar

  • 200g fresh mulberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Crush the digestive biscuits and mix with melted butter to form the base.
  3. Press the biscuit mixture into the bottom of a springform pan.
  4. In a bowl, beat the cream cheese, sour cream, and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the Earl Grey tea leaves and vanilla extract.
  7. Gently fold in the mulberries.
  8. Pour the cheesecake mixture over the biscuit base.
  9. Bake for 50-60 minutes or until set.
  10. Let it cool, then refrigerate for at least 4 hours before serving.
