- 24 Oreo cookies
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, room temperature
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 6 Oreo cookies, roughly chopped (for filling)
- Additional crushed Oreos for topping
Instructions
- Preheat your oven to 325°F (160°C) and place the rack in the center.
- Prepare the crust by pulsing 24 Oreo cookies in a food processor until fine crumbs form. Combine with ½ cup melted butter.
- Press the mixture into the bottom of a greased springform pan, evenly covering the base. Bake for 10 minutes and cool slightly.
- Mix the filling: beat 24 ounces of cream cheese until smooth, then add 1 cup sugar, 1 cup sour cream, and 1 teaspoon vanilla, beating until fluffy.
- Fold in roughly chopped Oreos into the filling using a rubber spatula.
- Pour the filling over the cooled crust in the springform pan, smoothing the top.
- Bake for 55-60 minutes, until edges are set but center jiggles slightly. Cool in the oven for an hour.
- Refrigerate the cheesecake for at least 4 hours or overnight until fully set.
- Serve with whipped cream and sprinkle crushed Oreos on top.
Notes
For a lower-fat option, you can use Neufchâtel cheese instead of cream cheese. Prepare the cheesecake the night before for the best flavor.
