Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the potatoes by washing and cubing them into bite-sized pieces. Toss them in olive oil, salt, and pepper.
- Roast the potatoes on a baking sheet for about 25-30 minutes, flipping them halfway through.
- Sauté the onions and garlic in a skillet over medium heat until fragrant.
- Cook the mushrooms in the skillet until tender, about 5-7 minutes.
- Add the spinach to the skillet and cook until wilted, roughly 2-3 minutes.
- Serve the roasted potatoes topped or alongside the sautéed spinach and mushrooms.
