Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, almond butter, honey (or maple syrup), eggs, and vanilla extract until smooth.
  3. In another bowl, combine the almond flour, baking soda, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
