Instructions
- Sauté aromatics: Heat oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté them until softened and fragrant—about 3-5 minutes.
- Brown the chicken: Add the cubed chicken to the skillet. Cook it, stirring occasionally, until browned and cooked through, around 5-7 minutes.
- Combine ingredients: Stir in the rice, pineapple chunks, chicken broth, soy sauce, brown sugar, salt, and pepper. The flavors meld beautifully at this stage, enhancing the overall dish.
- Simmer: Increase the heat until the mixture comes to a boil. Then, reduce to low, cover the skillet, and simmer for about 20 minutes, or until the rice becomes tender and the liquid has been absorbed.
- Fluff and serve: Remove the skillet from the heat. Fluff the rice with a fork to combine everything. Garnish generously with fresh herbs and a squeeze of lime juice before dining.
