- 1 cup chopped pistachios
- 1 tsp almond extract
Instructions
- Preheat the oven to 350°F (175°C).
- Prep the baking sheet by lining it with parchment paper.
- Cream the butter, brown sugar, and granulated sugar until fluffy, about 3 minutes.
- Add the egg and almond extract, mixing until combined.
- Combine the dry ingredients in another bowl before gradually adding to the wet mixture.
- Incorporate the chopped pistachios evenly into the dough.
- Scoop the dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool for 5 minutes on the sheet before transferring to a wire rack.
Notes
For a gluten-free version, use a gluten-free flour blend. You can also replace almond extract with vanilla extract.
