Description

A vibrant and hearty potsticker soup that blends tender dumplings with fresh vegetables in a rich, aromatic broth.


Ingredients

  • 8 Potstickers (chicken, pork, or vegetable)
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Mushrooms (sliced)
  • 2 cups Bok Choy (chopped)
  • 2 Green Onions (sliced)
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Ginger (minced)
  • 1 clove Garlic (minced)
  • Salt and Pepper to taste

Instructions

  1. Bring the broth to a boil in a large pot.
  2. Add the minced ginger and garlic, simmering for 2-3 minutes.
  3. Introduce the potstickers and cook according to package instructions (5-7 minutes).
  4. Incorporate the sliced mushrooms and chopped bok choy, cooking for another 3-5 minutes.
  5. Season with soy sauce, salt, and pepper. Adjust to taste.
  6. Serve in bowls, garnished with fresh green onions.

Notes

Add heat with chili peppers or switch bok choy for spinach or kale. Make ahead by prepping the broth and vegetables in advance.
