Description

Delicious and cheesy Queso Chicken Enchiladas, perfect for a comforting family dinner or a festive gathering.


Ingredients

  • 4 burrito size flour tortillas
  • 2 cups shredded chicken
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 can diced tomatoes with green chilies
  • 16 oz Queso Blanco Velveeta

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your chicken mixture in a large skillet over medium heat by combining shredded chicken with taco seasoning and chopped green chilies, stirring in ½ cup of sour cream.
  3. Assemble the tortillas by spreading ½ cup of the diced tomatoes in the baking dish, filling each tortilla with the chicken mixture, rolling them tightly, and placing them seam-side down.
  4. Prepare the sauce by melting Queso Blanco Velveeta with the remaining diced tomatoes and sour cream in a saucepan over medium-low heat.
  5. Top the enchiladas with the creamy Queso sauce.
  6. Add more shredded cheese on top, if desired.
  7. Bake covered with aluminum foil for 25 minutes, then uncovered for an additional 10-15 minutes until the cheese is golden brown.
  8. Enjoy after letting the enchiladas cool slightly before serving.
