- 4 burrito size flour tortillas
- 2 cups shredded chicken
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 can chopped green chilies
- 1 can diced tomatoes with green chilies
- 16 oz Queso Blanco Velveeta
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your chicken mixture in a large skillet over medium heat by combining shredded chicken with taco seasoning and chopped green chilies, stirring in ½ cup of sour cream.
- Assemble the tortillas by spreading ½ cup of the diced tomatoes in the baking dish, filling each tortilla with the chicken mixture, rolling them tightly, and placing them seam-side down.
- Prepare the sauce by melting Queso Blanco Velveeta with the remaining diced tomatoes and sour cream in a saucepan over medium-low heat.
- Top the enchiladas with the creamy Queso sauce.
- Add more shredded cheese on top, if desired.
- Bake covered with aluminum foil for 25 minutes, then uncovered for an additional 10-15 minutes until the cheese is golden brown.
- Enjoy after letting the enchiladas cool slightly before serving.
