Ingredients

  • ¼ cup (25g) unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring (liquid or gel)
  • ¼ tsp salt
  • 4 oz (115g) cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • ½ tsp vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, allowing a slight overhang for easy removal.
  2. Whisk together the all-purpose flour, cocoa powder, and salt until combined. Set this mixture aside.
  3. Stir the melted unsalted butter and granulated sugar in a large mixing bowl until well combined. Add eggs one at a time, mixing well each time.
  4. Mix in the vanilla extract and red food coloring until the batter is bright.
  5. Fold the dry ingredients into the wet ingredients using a spatula, being careful not to overmix.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 20–25 minutes, until a toothpick comes out with a few moist crumbs.
  8. Let the brownies cool completely in the pan.
  9. Beat the softened cream cheese and butter in a mixing bowl until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  10. Spread the cream cheese frosting over the cooled brownies, then lift them out using the parchment paper and slice into squares.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze wrapped tightly for up to three months.
