Ingredients

- 2 cups roasted red peppers
- 1 cup Gouda cheese, shredded
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add roasted red peppers and vegetable broth, bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and shredded Gouda cheese until melted and combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional Gouda if desired.
Notes
- For a spicier version, add red pepper flakes.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
