Description

A delightful stuffed chicken dish combining roasted red peppers, spinach, and melted mozzarella, perfect for family dinners or special occasions.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Combine the cooked spinach with roasted red peppers, mozzarella cheese, salt, pepper, and Italian seasoning in a bowl.
  5. Cut a pocket into each chicken breast, being careful to slice only one side.
  6. Stuff each chicken breast with the filling and secure with toothpicks if necessary.
  7. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Serve hot with your choice of side dishes.

Notes

For a make-ahead option, prepare the stuffing a day in advance. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
