- 4 chicken breasts, boneless and skinless
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Combine the cooked spinach with roasted red peppers, mozzarella cheese, salt, pepper, and Italian seasoning in a bowl.
- Cut a pocket into each chicken breast, being careful to slice only one side.
- Stuff each chicken breast with the filling and secure with toothpicks if necessary.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Serve hot with your choice of side dishes.
Notes
For a make-ahead option, prepare the stuffing a day in advance. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
