- 4 boneless, skinless chicken breasts
- 1 cup feta cheese, crumbled
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for cooking
- Toothpicks or kitchen twine for rolling
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling by mixing feta, spinach, tomatoes, garlic powder, salt, and pepper.
- Fill each chicken breast with a generous portion of the filling.
- Roll the chicken tightly around the filling and secure with toothpicks or twine.
- Brown the chicken rolls in a medium skillet with olive oil for about 3-4 minutes on each side.
- Bake the browned chicken in a baking dish for 20-25 minutes until fully cooked.
- Rest the chicken for a few minutes before slicing.

Notes
