- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil for frying
- 4 oz cream cheese, softened
- ½ cup powdered sugar
Instructions
- Soak the pineapple rings in a mix of dark and coconut rums for at least 1 hour. Drain and pat dry.
- Prep three shallow bowls: one with flour, another with whisked eggs and coconut milk, and the last with sweetened coconut flakes.
- Coat each pineapple ring first in flour, then in the egg mixture, and finally in coconut flakes.
- Heat vegetable oil in a deep pot to 350°F (175°C), using a candy thermometer for accuracy.
- Fry the coated pineapple rings for about 1 minute on each side until golden brown, avoiding overcrowding the pot.
- Drain the fried rings on paper towels to remove excess oil.
- Prepare the dipping sauce by mixing softened cream cheese with powdered sugar and a splash of reserved rum until smooth.
Notes
