Description

Delight in the tropical flavors of Rum-Soaked Fried Pineapple, featuring crispy, golden-brown rings with a rich rum-infused sweetness, perfect for any occasion.

Ingredients

Scale
  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak the pineapple rings in a mix of dark and coconut rums for at least 1 hour. Drain and pat dry.
  2. Prep three shallow bowls: one with flour, another with whisked eggs and coconut milk, and the last with sweetened coconut flakes.
  3. Coat each pineapple ring first in flour, then in the egg mixture, and finally in coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C), using a candy thermometer for accuracy.
  5. Fry the coated pineapple rings for about 1 minute on each side until golden brown, avoiding overcrowding the pot.
  6. Drain the fried rings on paper towels to remove excess oil.
  7. Prepare the dipping sauce by mixing softened cream cheese with powdered sugar and a splash of reserved rum until smooth.

Notes

Make sure to soak the pineapple rings properly for enhanced flavor. You can also bake the rings for a healthier option.
