  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup red wine
  • 1 cup mixed fruit (berries, orange slices, etc.)
  • 1/2 cup unsalted butter (for frosting)
  • 2 cups powdered sugar
  • 1/4 cup red wine (for frosting)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with colorful liners.
  2. Whisk together the flour, sugar, cocoa powder, baking powder, and salt in a large bowl.
  3. Beat the softened butter until creamy, then add the eggs and red wine, mixing until combined.
  4. Add the dry ingredients to the wet mixture gradually, mixing gently until just incorporated.
  5. Fold in the mixed fruit, ensuring it’s evenly distributed throughout the batter.
  6. Spoon the batter into the cupcake liners, filling them two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Beat the butter for the frosting until creamy, then gradually add powdered sugar and red wine until smooth.
  9. Frost each cooled cupcake with the red wine buttercream.

Notes

Make cupcakes a day in advance and frost them closer to serving for the freshest taste. Can substitute red wine for white wine.
