Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with colorful liners.
- Whisk together the flour, sugar, cocoa powder, baking powder, and salt in a large bowl.
- Beat the softened butter until creamy, then add the eggs and red wine, mixing until combined.
- Add the dry ingredients to the wet mixture gradually, mixing gently until just incorporated.
- Fold in the mixed fruit, ensuring it’s evenly distributed throughout the batter.
- Spoon the batter into the cupcake liners, filling them two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Beat the butter for the frosting until creamy, then gradually add powdered sugar and red wine until smooth.
- Frost each cooled cupcake with the red wine buttercream.
Notes
Make cupcakes a day in advance and frost them closer to serving for the freshest taste. Can substitute red wine for white wine.
