- 2 cups Japanese short grain rice (rinsed and soaked)
- 3 tablespoons Japanese ‘Kewpie’ mayonnaise
- 2 tablespoons unsalted butter
- 3 cloves garlic (finely chopped)
- 1.5 tablespoons soy sauce
- 2 large eggs (lightly whisked)
- 2 teaspoons finely chopped parsley (for garnish)
- Sea salt (to taste)
Instructions
- Prepare the rice according to your chosen method (rice cooker or stovetop). Spread it on a tray to cool and dry slightly.
- Heat the unsalted butter in a large non-stick skillet over medium heat until it starts to melt.
- Add the finely chopped garlic and sauté until it turns golden brown and fragrant.
- Lower the heat to medium-low and mix in the cooked rice, breaking up any clumps gently.
- Make a well in the center of the rice, pour in the whisked eggs, and stir them gently until scrambled.
- Drizzle in the soy sauce and Kewpie mayonnaise, stirring until the rice is evenly coated and heated through.
- Taste and adjust with sea salt if necessary, then sprinkle the parsley on top before serving.
