Ingredients

  • 3 tablespoons Japanese ‘Kewpie’ mayonnaise
  • 2 tablespoons unsalted butter
  • 3 cloves garlic (finely chopped)
  • 1.5 tablespoons soy sauce
  • 2 large eggs (lightly whisked)
  • 2 teaspoons finely chopped parsley (for garnish)
  • Sea salt (to taste)

Instructions

  1. Prepare the rice according to your chosen method (rice cooker or stovetop). Spread it on a tray to cool and dry slightly.
  2. Heat the unsalted butter in a large non-stick skillet over medium heat until it starts to melt.
  3. Add the finely chopped garlic and sauté until it turns golden brown and fragrant.
  4. Lower the heat to medium-low and mix in the cooked rice, breaking up any clumps gently.
  5. Make a well in the center of the rice, pour in the whisked eggs, and stir them gently until scrambled.
  6. Drizzle in the soy sauce and Kewpie mayonnaise, stirring until the rice is evenly coated and heated through.
  7. Taste and adjust with sea salt if necessary, then sprinkle the parsley on top before serving.
