Description
A comforting one-pan meal that combines crispy potatoes with a savory sloppy joe filling, topped with melted cheese.
Ingredients
Scale
- 4 medium Potatoes, diced
- 1 lb Ground Beef (80/20)
- 1 cup Tomato Sauce
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Bell Pepper, diced
- 1 cup Cheddar Cheese, shredded
- 1 tbsp Cooking Oil
Instructions
- Prepare the potatoes: Dice the potatoes into small cubes, heat a skillet over medium heat, and add oil. Cook until golden brown and tender—about 15 minutes.
- Cook the beef and veggies: Make space in the skillet, add the ground beef, onion, garlic, and bell pepper. Cook until the meat is browned and veggies are tender, about 5-7 minutes.
- Simmer with sauce: Pour in the tomato sauce, stirring to combine. Simmer for about 3-5 minutes.
- Melt the cheese: Sprinkle cheese over the top, cover with a lid, and reduce heat to low, allowing the cheese to melt for 2-3 minutes.
Notes
For extra flavor, consider adding spices like chili powder or cumin. Can be made ahead and reheated, or stored in the freezer for up to 3 months.
