- 1 cup coconut milk
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated

- 1 tablespoon red curry paste
- Salt and pepper to taste
- Chopped peanuts for garnish

Instructions
- Place chicken thighs in the slow cooker.
- Mix the sauce ingredients in a bowl until smooth.
- Pour the peanut mixture over the chicken.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Shred the chicken in the sauce using two forks.
- Serve over jasmine rice or noodles and garnish with peanuts and green onions.
