Ingredients

  • 2 pounds chicken thighs
  • 1 cup coconut milk
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon lime juice
  • 1 tablespoon red curry paste
  • Salt and pepper to taste
  • Chopped peanuts for garnish
  • Green onions for garnish

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Mix the sauce ingredients in a bowl until smooth.
  3. Pour the peanut mixture over the chicken.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. Shred the chicken in the sauce using two forks.
  6. Serve over jasmine rice or noodles and garnish with peanuts and green onions.

Notes

For a richer flavor use high-quality peanut butter and consider adding vegetables in the last hour of cooking.
